Avocado & Egg Power Bowl 

Servings: 1-2

Total Time: 20 minutes

Ingredients:

  • 1 ripe avocado, sliced
  • 1 large egg (boiled or scrambled—perfect for picky eaters!)
  • 1/2 cup cooked quinoa (fiber and protein powerhouse)
  • Small handful of baby spinach or mixed greens
  • 1 tsp olive oil or coconut oil
  • Sprinkle of turmeric (optional, but awesome for immune support)
  • Salt and pepper (in moderation)

Directions:

  1. Cook quinoa as directed and set aside.
  2. Sauté spinach in olive oil until it just wilts.
